Cinghiale or wild boar Pappardelle recipe… Good things take a long time coming

PastaThis recipe is a speciality of the local area for La Collina del Sole an outstanding Lucca villa rental situated in the heart of the chestnut wood area of Garfagnana a region rich in experiences and activities, with beautiful places of interest that you can explore while enjoying your holiday villas in Lucca The mountains afford world class climbing, and mountain recreation like walking; a real treat in the heat of the summer when you rent a villa in Tuscany as the usual villas for rent in Tuscany have flatter surroundings. Here you find a rich landscape that changes with every passing hour … ideal to just sit and “chill” at your villa rentals in TuscanyThe recipe for cinghiale sauce requires time and skill and can feed 10 to 25 people. Whether you try your hand at it, get one of our chefs to cook it for you, or just order pappardelle al cinghiale at a local restaurant, this recipe reveals the work that goes into this seemingly simple Tuscan treasure. The sauce: start with a fresh cut of wild boar, and leave to age for at least three days at O degrees Centigrade. Bone out the leg parts and cut off what little fat you will find. Cut the ribs into chops and set aside to make the stew. Cut half of the meat into large squares and place in a big pot with lots of sprigs of freshly picked rosemary, sage, bay, peppercorns and parsley stalks. Dice up vegetables in the same manner: red onions, the white part of some leeks, celery, and a small quantity of carrots and add to the huge pot. Add lashings of good Tuscan red wine until it covers the cinghiale. You should work on 2/3 meat, 1/3 vegetables ratio, and for every two bottles of wine add one cup of olive oil. Leave the stew to rest in the fridge for two days, stirring when possible to help marinate all the flavours. Throw in a few peppercorns and juniper berries for good measure. After a couple of days drain off the liquid and set aside. Heat a heavy-bottomed pan and throw in a good amount of olive oil-then double it. Sautè the cinghiale and vegetables. This step can be done in stages, so you don't stew the meat, but brown it. Once all the meat has been browned, throw everything into the pot, adding the liquid marinade and a small amount of tomato pulp. Bring to a boil and simmer very slowly for at least four hours. Season with salt and taste for flavour and then smother you chosen pasta with the sauce. To accompany go for an aged pecorino cheese (not parmesan) and a bottle of Piastraia Bolgheri Rosso DOC Michele Satta which beautifully accompanies the rich, intensely gamey taste of the wild boar.If you would like other wine suggestions contact us and we or our freind Andrea at il Vecchio Mulino will be deligthed to help Enjoy! 360DegreefromPool

His father was a wild boar, his mother was surprised…

Mr PigIn the forest that surrounds la Collina del Sole there lives the Italian wild boar…and whilst most of you may know what to do when confronted by a grizzly bear, a lion, a tiger or a scorpion, one might be less aware of the protocol for a cinghiale (wild boar). Cinghiale is a favourite dish in the local restaurants of this Lucca villa rental as like some other holiday villas in Lucca it is situated overlooking the Apuan mountains in Garfagnana. Unlike many villas for rent in Tuscany commands the most extraordinary view. The last thing on your mind when you rent a villa in Tuscany is to come face to face with a cinghiale, to be honest, it is a rare occurrence with residents of villa rentals in Tuscany however if you are very quiet while walking in the woods near La Colina del Sole you may find one. These beasts are actually quite timid. They have a sharp sense of smell, but poor eyesight, so once they smell your presence they may get a little closer to see you, however, usually upon realising that you are a threat they will just run away in a fit of squeals and grunts. And they can run fast…so don’t think you’ll be able to outrun one.

In the rare occasion that a cinghiale should feel threatened (perhaps you are hunting it… in which case, that is fair enough), a wild boar does have the strength to harm you. In which case you should either talk loudly or yell. The boar will most likely want nothing to do with you and scoot off. I recommend vocalizing a recipe for “papardelle con cinghiale” just to really drive home the message …well that is my theory anyway! You could also back away slowly and steadily, this prevents the animal from feeling further threatened which means it is less likely to charge at you. Some sources even suggest trying to climb a nearby tree, which in my opinion is easier said than done, especially in Northern Tuscany where the trees tend to have thin branches where are next to impossible to scale!

There is no need to panic about the likelihood of stumbling across a wild boar; you most likely will never see one. The most probable encounter you will have with one is when you sit down at El Pozzo restaurant down the road from La Collina del Sole about to tuck into a bowl of wild boar stew - a rare and deliciously intense dish that you must try if offered on the menu. Chocolate is cheaper than therapy, and you don’t need an appointment...

Chocolate TrufflesChocolate makes you feel loved! and if you are treating Mum to a holiday villas in Lucca and spending Mother’s day the glorious Lucca villa rental called La Collina del Sole then pop into the local town of Castelnuovo and seek out Antica Pasticceria, in our travels around villas for rent in Tuscany we have not found its equal, as being chocoholics; Chocolate is important to us whether we rent a villa in Tuscany for fun, whether we are at work or whether we are advising fellow travellers of the delights and places of interest around villa rentals in Tuscany Among the favourite experiences that we love in the Garfagnana area is the Bar and Patisserie called Antica Pasticceria …You may think that you have just walked straight onto the set of Charlie and Chocolate Factory as you drink in the heavenly fumes of freshly crushed roasted cocoa beans, and stare awe struck at the rows of finely crafted chocolate figurines, which range from chocolate-shaped Ferraris to chocolate-shaped crowns and frogs. Behind the glass tops a very beautiful woman (the wife of the chocolatier) will allow you to sample some of the mouth-watering chocolates on offer, they are all hand-made, and they all rival the chocolate at Fortnum and Masons…

Why not try some of their truffles…They range from the amaretto, which is a bittersweet chocolate ganache with a nutty Amaretto liqueur and chocolate drizzle. Or a smooth dark chocolate with a red-hot explosion at the finish as it is dusted with hot chilli pepper powder. The chai chocolate truffle is a bittersweet chocolate ganache with a heavenly blend of exotic teas and spices, or the champagne truffle which gives the dark chocolate ganache a light, creamy flavour. For the more exotic amongst you, sample the flaky fresh coconut pieces swirled into an all-white chocolate truffle with a creamy, melt-in-your-mouth centre. Or the Dulce de Leche chocolate truffle which combines Argentina's signature blend of milk caramel in a white chocolate and sweet cream ganache, enrobed in rich dark chocolate. For the decadents amongst you there is the Poire au Cognac, which takes the natural juices from the local pears added to a smooth white ganache, enrobed with dark chocolate. Antica Pasticceria has an impressive fan-following. Locals frequently pop in to eat their favourite cakes, biscuits, croissants, mousses and confections. One can even order a traditional Tuscan hot chocolate; the hot chocolate arrives piping hot, a deep caramel colour with cinnamon sprinkled on top, it is so thick and creamy that the spoon stands up straight in the cup! All their items are made with traditional recipes and choice local organic ingredients which gives their products a distinct and well-rounded flavour.LCDS vineyard and pool viewSmall

Make the world better with a sweater…

Christmas JumpersItaly has launched a global campaign promoting wool, inspired by the "Live naturally, choose wool" moto. In these winter months, villa rentals in Tuscany can get fresh so… what better way to keep warm in your Lucca villa rental than a beautiful hand knitted woollen sweater, like the ones you get in Marias shop just down the road from La Collina del Sole where the sweater will be made for you within a couple of days - another unique experience and service when you rent a villa in Tuscany !! At La Collina del Sole a warm and welcoming addition to villas for rent in Tuscany skiing is just 1 ½ hour away, a visit to the sea shore is the same distance, and Milan well ... that is just over 3 hours - hence it is perfectly placed as a holiday villas in Lucca to enjoy Tuscany in all its natural splendour.Italians are promoting wool as a natural, biodegradable and renewable fibre, launched in Milan, the celebrations have united the textile community, the fashion industry and consumers all together for the first time. A flock of traditional Italian sheep were left grazing in a pen in front of the Duomo to highlight the natural origin of wool and offer consumers an unexpected wool experience. This campaign for the promotion of wool has caught the attention of Italians because, as the Prince of Wales explains: "You do not have to look too far back in history to see that wool was once the mainstay of the global economy. In recent years however, wool has been fighting to compete with man-made fibres. For too long we have managed to forget what a wonderful fibre wool is. Wool is empowered with exceptional natural elasticity so not only will a wool garment offer superior drape and handle, this elasticity also gives the wearer a durable and high quality garment that will last for many years. - Simply put, wool looks good for longer! One of the highlighted aspects of wool was the natural beauty of Merino wool. The Merino is an economically influential breed of sheep prized for its wool as the Merinos are still regarded as having some of the finest and softest wool of any sheep. Although ‘fluffy’ in appearance, the fibres of a merino wool product are lighter than any other sheep’s wool, reducing the scratchy, heavy sensation that many people associate with a thick woollen jumpers. Therefore merino wool can be spun into a huge snuggly jumper or for “next to the skin” clothing such as socks, and underwear. Italians have a mission to convince consumers that opting for wool as opposed to synthetics in fashion and lifestyle will make a positive contribution to environmental sustainability around the world - give me the opportunity to snuggle up in a Marino wool jumper in front of the fire at La Collina del Sole with a cup of hot cocoa and I am sold!

Don’t get your knickers in a twist…

Image of girlItalians have managed to make the otherwise innocent New Year's Eve celebration a little bit naughty. Tradition dictates that everyone must wear red underwear on New Year's Eve - from boxer shorts to sexy lace panties - anything goes, as long as it's red. Shortly after Christmas, red underwear is stocked exclusively all over the country, so there is no excuse not to join in! When you rent a villa in Tuscany which we highly recommend as Italian New Year’s celebrations are legendary! With a great deal of feasting and fireworks that can be brilliantly overlooked in the valley below from La Collina del Sole one of the best located Villa rentals in Tuscany as it is placed overlooking the Serchio valley. This superb Lucca villa rental has a commanding view of the Apuane hills, where more fireworks can be seen from high altitude villages and refugios where long distance walkers have accomplished a once in a lifetime experience and trekked from their holiday villas in Lucca to the top of the Apuane range, with its beautiful Monte Forato a mountain that has a huge circular hole through the middle,  a highlight to view from the villas for rent in TuscanyIn Spain and Chile there is a similar custom of wearing unusual underwear in case you thought that it sounded a little odd, in Japan locals consume large amounts of a chewy, sweet rice cake, called Mochi, in order to guarantee a long and happy life. This sounds innocent enough, however this tradition has been known to lead to people choking to death – I’m not sure if it’s worth the hassle, to be honest…best to stick to red underwear! Italians also eat “cotechino e lenticchie” (pig’s feet and lentils) during New Years. According to tradition this bizarre ritual will bring good luck to the Italian’s finances in the coming year. The economical abundance wished for is symbolised through the hoof because the meat has a high fat content and a superior richness in flavour to other cuts of meat. Equally symbolic are the lentils, as their ovular shape is reminiscent of gold coins and the money the Italians hope to earn in the coming year. Needless to say, the more you eat, the better off you will be financially! The traditional recipe that you will come across in the surrounding area of la Collina del Sole will be pig’s feet in a tomato sauce. Nicely browned pig trotter will simmer in a sauce composed of sautéed and thinly sliced onion and chopped garlic, olive oil, tomato sauce, oregano and Italian seasonings. Chefs will cook the pig’s feet in the sauce for up to four hours until the meat in incredibly succulent and tender, and it falls off the bone easily – sounds pretty delicious to me!

Where the wild things are...

Pumpkin CakeHalloween as we know it does not exist in Italy so if you are at Lucca villa rental expecting to go trick or treating you are in for a surprise!!! Italians celebrate all hallows day with a church service to commemorate the memory of dead relatives. A beautiful celebration is held at Santuario the local monastery to La Collina del Sole . A really worthwhile “dress up day” to enjoy when you rent a villa in Tuscany is the Carnevale a true highlight during the Italian special dates calendar. During this Italian fun day, people dress up and play practical jokes. The 'Carnevale' is usually in February, as it is held 40 days before Easter, a beautifully cool and crisp time of year to enjoy villa rentals in Tuscany. It is celebrated with parades, masquerade balls, entertainment, music, and parties. Kids dress up, go out and throw confetti and play innocent practical jokes on everyone. In true Italian decadent fashion they celebrate Carnevale for roughly one week. Children in Italy stuff themselves with pumpkin risotto and porcini mushrooms and Castagnole - instead of sugar filled candies – a healthier way to feast. If during your stay at holiday villas in Lucca you would like to learn the darker lore of the area, we found out from our guide when we stayed at La Collina del Sole that you can still find elements of the macabre, the famous Devil’s Bridge is a stone’s throw away from this beautiful villas for rent in Tuscany - Ponte della Maddalena, which translates as the Bridge of Mary Magdalene, is a bridge crossing the Serchio river near the town of Borgo a Mozzano in the Italian province of Lucca. It is more widely known as the Bridge of the Devil as legend has it that the villages on either side of the river made a deal with the devil in order to gain his help to construct the architecturally magnificent stone arch bridge that still stands today despite over 500 years of use, in order to facilitate the crossing of the river which was vital for the continuation of a medieval pilgrimage route. The devil agreed to build the bridge, but in return he asked to take the first soul to cross the bridge back to hell with him. After building the bridge overnight the devil was outwitted by his adversaries, the townspeople threw bread to lure a dog over the bridge first, which was last seen descending into the water, bringing peace to the community. The high arch in the bridge is supposedly due to the devil jumping in rage at being outsmarted by the townsfolk. It takes great wit to outsmart Italians ! Devils bridge Ponte del Diavolo

To make these juices, you clean the blueberries, or raspberries and put them in a pot with some water on a low flame long enough to soften them, then pass all the softened fruit through a fine mesh sieve and drain the juice, mix it with sugar according to taste no more than 300 grams per litre of juice. Well, well, well what do we have here …

CHESTNUTS  Lupinaia the village above La Collina del Sole is hosting  the Festa della Castagna  this weekend. The humble chestnut is responsible for keeping the populationFunghi by Alina (6) alive in the area of Lucca Villa Rental during WWII as there was little else to eat. You can see the why in the Museo della Liberazione During WWII the chestnut trees of Garfagnana continued to yield their fruit. In order to eat the naturally sweet chestnut that continues to be so abundant in the woods above Holiday Villas in Lucca you first collect the chestnut or Castagne  then they are dried gently over a ”Metato” for 40 days. A metato is either a two tier rustic building erected during the chestnut harvest in the Apennine area where you find villas for rent in Tuscany  or sometimes the “metato” was an integral part of the house in the kitchen area which in the autumn and winter became View from La Collina del Sole a meeting place. Although nowadays when you rent a villa in Tuscany the most attractive feature is the scenery and sunspots a few decades ago the most inviting part of a home was the warm meeting place near the kitchen, where the chestnuts were placed to dry on reed scaffold or planks of wood or cane close to the kitchen hearth which ensured a constant heat. Not a normal feature nowadays in any of the villa rentals in Tuscany ! The chestnuts then dry up over 40 days in a gentle heat, once dried, the chestnuts were shelled with a vigorous beating that shredded theLa Collina del Sole in the EVENING light with Pool skin off nut shells inside sturdy bags. Nowadays  “metati” have disappeared as they have been transformed into storage rooms or large cupboards. From the Middle Ages until the present day, the chestnut has been central to the nourishment of mountain dwellers, as evidenced by the numerous laws over the centuries, for the protection and regulation of the exploitation of chestnut trees. The Statutes of Gavinana of 1540 for example stipulate that the chestnut harvest by the owner of the woods ends with the month of November, after which the poor could freely reap the remaining nuts.   Once dried the nuts would be taken to FOOD at La Collina del Sole the mill to be turned into chestnut flour, as this flower is naturally sweet there is little need for additional sweeteners and is made into fried tranches of chestnut flower or castagniaccio, which is chestnut flour mixed with water, rosemary, orange peel, pine nuts and walnuts, raisins, milk and olive oil. Chestnut flour was also used for bread and polenta. Chestnuts could also be either roasted and called necci or eaten boiled and called balucci.   Even the most mundane food when said in Italian has a special ring to it !

FARRO E FUNGHI or spelt with funghi porcini  for 4 people INGREDIENTSFunghi by Alina (4) 300 grams of barley or spelt 300 grams of fresh Funghi Porcini 2 cloves of garlic Fresh parsley 6 tablespoons of olive oil salt and pepper 1/2 cup of dry white wine 2 ripe tomatoes Broth either vegetable or chicken 1 knob of butter 6 fresh mint leaves Clean the mushrooms and cut into small pieces, mix with the chopped garlic and parsley and place into a pan with the olive oil to brown. Add salt and pepper and leave it to cook for about 10 minutes having added the wine, allow the wine evaporate. Add the diced tomatoes, and allow the flavours to mix together as they cook for about 6 minutes then add the spelt or barley which has been properly cleaned , stir for 5 minutes then begin to pour in broth until fully cooked , which will be about 25 minutes. Finally in the last minute add the butter and mint leaves.

PAPPARDELLE AI FUNGHI  or “Butterfly” shaped pasta with Funghi Porcini for 6 People INGREDIENTS 400g Butterfly or “bow tie” shaped pastaFunghi by Alina (1) 300 grams of funghi porcini 2 cloves of garlic 1/2 cup extra virgin olive oil mint chopped 50 grams of grated Parmesan cheese Beef broth salt and pepper

Place the oil, garlic and chopped mint in a pan and fry, add the mushrooms well washed and cut into slices. Cook for a few minutes, add the broth, salt and pepper and let it evaporate over low heat. As you are cooking the funghi porcini boil the pasta in plenty of hot water, once cooked drain and dress with the funghi porcini sauce and sprinkle with grated Parmesan cheese. This shape of pasta is preferred for this recipe as the openness of the shape will allow a generous quantity of sauce to be on it and as it is eaten the pasta will be more exposed to the taste buds and hence intensifying the flavour of the funghi porcini.

AND in case you wanted an alternative way of preparing Funghi Porcini in oil here it is: INGREDIENTS Per kilo of mushrooms:Funghi by Alina (3) 2 cups water 2 cups of wine vinegar salt peppercorns fresh herbs like thyme and parsley garlic extra virgin olive oil

Clean the mushrooms and cut into medium-sized chunks, boil the water and add the vinegar, salt and herbs. When the water re-boils put the mushrooms in and boil for 3 minutes. Strain the mushrooms and place them to dry on a cloth for one day. Put the mushrooms in glass jars with garlic, peppercorns and thyme then cover with extra virgin olive oil close the jars and keep them in a cool, dark place. BUON APETITO ! Food Glorious Food ... a la Garfagnana

While staying at our favourite Lucca villa rental  called La Colina del Sole we were able to La Collina del Sole Party time (4)buy home pressed olive oil “di frantoio” from friends of the cook who prepared meals for our  holiday villas in Lucca  Her homemade cooking as you can see from her suggested menu uses liberal quantities of olive oil so with the knowledge that olive oil is excellent for your health and memory… I asked for the recipes of her bruschetta and her farro  Delicacies that you must try when you rent a villa in Tuscany as they embody the Tuscan flavour you encounter when eating in at your villa rentals in Tuscany or enjoy the delights of the best regional restaurants near your villas for rent in Tuscany

The olive oil we bought has a strong sweet taste and a strong green colour, and the trick is to eat it raw to get the best out of its nutritional properties and its flavour.
To make the bruschetta use Italian bread, potato bread for preference that is one day old Vendemia Feastallow two slices per person. If you are serving 10 slices;  just before your guests arrive, finely chop some vine tomatoes [a heaped handful will do ] and with their juice soak them in a bowl with a least 5 tablespoons of the best olive oil, add a pinch of salt. ThBruschettaen peel garlic cloves, and rub one raw clove at a time over the surface of the slightly dry bread, one clove will cover the surface of 2 to 3 slices of bread. Finely chop at least 20 basil leaves and add to the tomato and olive oil mixture, ladle the chopped tomatoes and basil leaves onto the bread slices allowing the fresh tomato water and oil mixture to ooze through the bread and … Presto one very delicious antipasto served up !

To cook Farro or spelt in the traditional garfagnana way for at least 12 people, cook the spelt as you would rice, with 3 cups of good stock to one cup of spelt, fry the spelt gently in a tablespoon of olive oil [ not the Da GiaccoREALLY good freshly pressed olive oil but good extra virgin oil that has been kept out of the sunlight.] Fry the spelt in the hot oil until lightly golden add the three cups of boiling stock. Cook for about 15 minutes until most of the stock has been absorbed by the spelt, while it is cooking cut 5 to 8 vine tomatoes into rough cubes keeping the skin and all also finely chop at least 30 leaves of basil.  When the farro has finished cooking and is still warm add the tomatoes and basil and at least 4 generous tablespoons of the best olive oil. This dish can be eaten warm or cold and can be kept for at least 3 days in the cool part of the fridge.
Buon Apetito !

Things you NEED to know about Olive Oil

People living in the Mediterranean have a much lower risk of contracting Alzheimer’s Eating at tabledisease than those in other parts of the world. This explains why most of the elderly local population around villas for rent in Tuscany who eat a healthy Mediterranean diet similar to the one we ate at La Collina del Sole when we ordered the suggested menu from Maria the super cook of Lucca Villa Rental are in strikingly good form at a ripe old age, with alert minds and a quick joke -  such a pleasure to encounter when you rent a villa in Tuscany and encounter the locals, whether in the local café to your Villa rentals in Tuscany  or the restaurants near your Holiday Villas in Lucca , most local restaurants  have  a designated table for the older men who,  for some reason,  have no women to cook for them. They meet every day usually for lunch but sometimes for dinner too, they read the local press and have a jolly good chat. Researchers looking for an explanation found an association between extra virgin olive oil and low rates of Alzheimer’s. They attributed olive oil’s disease-fighting power to high Pizza making at La Collina del Soleamounts of monounsaturated fats. However, new research shows that oleocanthal - a natural substance found in olive oil is the real cause of Olive Oils remarkable quality Research has shown that oleocanthal decreased the accumulation of beta-amyloids—the amino acid–based plaques that scientists believe cause Alzheimer’s—in the brain and boosted production of the proteins and enzymes that researchers think play roles in removing those same plaques. Results also showed that oleocanthal from extra-virgin olive oil which is consumed in a Mediterranean diet has the potential to reduce the risk of AD or related neurodegenerative dementias. When you buy olive oil it is worth bearing in mind that the terms “first pressing” and “cold pressed” don’t mean much on a bottle of olive oil that’s already labelled “virgin.” There is only one pressing involved, and it always takes place at ambient temperature and the difference between “virgin” and “extra virgin” is the percentage of acidity allowed - up to 2% and 0.8 % respectively.OSTERIA Vecchio Mulino Italians consume about 3 gallons of olive oil per person, per year, but Greeks consume the most in the world about 5 gallons per capita annually, both countries are known for their “Dolce Vita” attitude Olive oil goes rancid rapidly when exposed to light and heat, so although it looks nice in brightly-lit displays or sunny shop windows, you shouldn’t buy those bottles, store most of your oil in a cupboard or better still the cellar and only keep a small container to hand for daily use. Be sure to clean that container before refilling each time, so you won’t end up adding good oil to rancid remainders. As if deliciousness and protection against Alzheimer’s were not enough to recommend it, other research has found that extra virgin olive oil helps to clarify thinking and improve memory. Olive Oil is GOOD for YOU

Recently when we were staying at La Collina del Sole our favourite Lucca Villa Rental a DSCN1654friend was told that unless he cut out all fats from his diet there would be trouble, which meant no egg yolk, no fatty meat, certainly no butter and no oils EXCEPT Olive Oil that is because Olive Oil is GOOD for you, it is a healthy source of monounsaturated fat and antioxidants. The best Olive Oil comes direct from the press, when you rent a villa in Tuscany it is a good idea to check out the area just north of Lucca for Olive oil farms, as they might sell to charming guests at Holiday Villas in Lucca some of the precious freshly pressed Olive Oil [only destined for home consumption] which is ripe, viscous, fruity and way too precious for cooking and best sprinkled on salads.  An experience  that we suggest when you choose villas for rent in Tuscany in the late autumn is to see the Olive harvest in progress, to  do this you will have to be prepared to travel along winding roads in the sunny hillsides of Lucca to find a “fattoria” Oliveswith Olive Trees, there are several near villa rentals in Tuscany  in these fattorias at harvest time the young family members and grown strong men will be climbing gnarled old olive trees like monkeys, shaking the fruit into nets spread around the trunks, then the olive harvest will be taken to the local mill where it is converted into olive oil nectar. San Pellegrino from La Collina del SoleLa Collina del Sole produces a minute quantity of Olive Oil, it is barely enough for a few meals but .. my oh my … its good  along with the small Olive oil production of other villas and farms, this Olive Oil  is a bright green in colour and is too perishable for export and cannot be found in supermarkets or delicatessens.  To the palate it is liquid gold, it tastes of the sunshine of where it was grown and it is best when freshly pressed as, unlike fine wine it does not benefit from aging.

The colour of the oil reflects the maturity of the olives pressed. Darker oils usually come DSCN1661from riper olives and have milder flavours, whereas the unripe olives can make some of the most flavourful oils, which are bright, almost neon green.

At La Collina del Sole you can book one of our favourite experiences which is Olive Oil tasting at Il Vecchio Mulino as extra virgin olive oils like wines have differing tastes, each with its own subtle complexities of flavour, colour and body based on factors like the terrain, production methods, and the type and age of the olives  harvested. There’s one big difference between wine and Olive Oil:  wine improves with age, olive oil does not. It can lose its strongest flavours in a matter of weeks.

Pure Palazzo Piccolomini Pienza

As a frequent visitor to La Collina del Sole  we have been fortunate enough to visit many La Collina del Sole - Rebecca JensenItalian Palazzos and Villas in the area of Villa rentals in Tuscany and  Palazzo Piccolomini which is in Pienza a 2 ½ hours’ drive from our Lucca Villa Rental is a star among them all. It is Welcoming and cool, a hallmark of Italian Villa architecture which you would expect to see in all Villas for rent in Tuscany It is full of one of a kind treasures, a real treat to visit when you Rent a villa in Tuscany  it is grand yet sober and unassuming and so we consider it a star attraction when you are in Holiday Villas in Lucca DSCN1761Palazzo Piccolomini was donated to the state by the last in line of the  Piccolomini family, along with many of thDSCN1677e family treasures, this family provided two Popes,  Pius II who was born in the Palazzo and his nephew Pius III The Palazzo itself is marvellously simple and sober, most of the rooms are lightly decorated with a few very special items, like a small drawer cabinet decorated in Agate fronted panels that look like landscape from 1 metre away but in fact are the result of salt deposits on the stone, which has been cut in slivers. There are only 2 other such items of antique furniture in the world. There is a fresco painting of the family tree on a very large and impressive wall that depicted the family up to the 1800’s, and off the main reception room is a small alcove that was for the Duchess of Piccolomini,  situated beside the fireplace, the alcove has decorated walls and a sitting area in plush red velvet with small portraits of DSCN1755the family and with a window, this is where the Duchess would retire to read as the Palazzo was very cold in the winter and this was the only way to keep warm while reading a favourite book.

At the entrance room there is a table called the “Arms rest” where all weapons aka arms would be placed upon as you came into the Palazzo, you can also admire family portraits, beautiful gold and silver inlay leather wallpaper given as a wedding gift by Catherine of Aragon, collections of arms and armour hanging on walls. DSCN1756The Pallazo houses the bedroom of Pius II with a portrait of him on the wall painted while he was alive, a very elaborate baroque bed which dates from a later time, and 3 items of furniture that belonged to Pope Pius II, one a 4 sided revolving bookstand, a short drawer armadio and a receiving chair with a very high back which also served as a commode [ talk about multitasking ! ] there were in another room many books some of them dating back to  XIII and a few star gazing apparatus and treatises. The Palazzo has a terrace on the 1st floor with a commanding view of the Val D’Orcia  declared a world heritage site and protected by UNESCO, and a simple garden, with Roses walled in by a box hedge. All had a wonderfully sober and uncomplicated feel. The Palazzo had been saved from looting during WWII as the German Commanding officer upon taking control of Pienza and the surrounding countryside during WWII issued a protective order for the Palazzo and its contents, the document can still be seen framed on the walls. On the way out and throughout the Palazzo you can spot the coat of arms of the family - a cross with 4 crescent moons which signifies the 4th crusade to which this family went to.

If you prefer to go further afield from your villa rentals in Tuscany say to Siena here are a few special and very unusual presents that we recently found.Following DSCN1684the excitements of the 16th of August with the last Palio of 2013 Siena –will go into a somnolent state, perfect to admire the dramatic inclined fan shaped central square preferably sitting at a table with a Bellini cocktail while enjoying the sunset on the Tower and entire Piazza, the whole scene will seem dipped in liquid amber, in the evening the evening streets of Siena are empty and will still be decorated with the Contrada lights, colours and flags, it is easy to imagine you are walking in the past as the buildings seem unchanged in centuries and the stillness of the night is almost complete. DSCN1673 Now for the unusual shops my favourite is La fabbrica delle candele aka the handmade candle and wax dipped flower shop where a young woman dips silk flowers in wax and then gives them a smooth glistening finish, they are in Via dei Pellegrini, 11, Siena, Province of Siena, Italy. They also hand carve and create intricate designs withDSCN1799in the candles in front of you, explaining the process as they go and even personalising your candle for you if you wish

My next favourite is a artisans ceramic shop where you can buy plates decorated with the shields of each contrada in Siena It is The Studio Artistico in Via San Pietro 22 - 53100 Siena, Tel+39 0577 288188 with an elderly couple that actually paint the plates in front of you and can eveDSCN1800n personalize it,  we bought a magnificent HUGE plate with a dragon rampant.

Should you need a breather Siena has a fondness for “Osterias” and they ALL look really good, one we loved is, Osteria le Logge Due, Via Porrione 33, Siena, tel +39  0577 48013  They have tables both outside and in, used by locals and visitors. Should you need a “gelato break” go to GROM in Via Banchi di Sopra #11/13  their telephone # 0577 289 303 where they make the most wonderful icGELATO ! ! ! by Rebecca Jensene cream “as it used to be made” using only ethically produced ingredients, like coffee from Guatemala, fresh milk and fresh spring water for sorbets, fruit only when it is in season like strawberries in summer and tangerines in winter my favourite is liquorice gelato. Nearby there is a beautiful paper shop with hand decorated paper cards with open DSCN1670windows showing drawings of the Siena Duomo and the Siena tower in the Piazza, or on Florence and Pisa, it also sells persoanlized seals and fun seals with sealing wax and ingenious bookmarks, it is called Il Papiro in Via Di Citta' #37, Siena 53100, Tel: 0577284241, they also have shops in Florence, Venice, Pisa, Cortona, Orvieto and New York, Palm Beach and Melbourne!   So you can re-stock when you get home. Other fun spots in Siena are highlighted in the CollinadelSolewordpress blog DSCN1716Following your successful personalized shopping you might want to relax at the botanical gardens which are only open in the morning they are fresh, inviting, cool and calm, or if you prefer views and are in need of a breather nearby there is a lovely garden on a wall at the edge of Siena that overlooks the surrounding fields with a Phenomenal view, night and day. Or on the other side of town in Costa di Sant Antonio, another beautiful place to relax away from the hordes of tourists at midday in the centre of town you can head for  St CatherinDSCN1692e’s home which has been turned into a shrine  go through a lovely Cortille of arches and turn left into what was her home and is now fully painted in wall to  wall murals depicting different stages of St Catherine’s life, then follow the pathway going downstairs to find the bedroom of St Catherine which depicts murals of St Catherine’s life as a child and adult.  Opposite what was the old kitchen is a church, with many murals depicting the life of St Catherine. It is a lovely haven of peace and tranquillity. Upon leaving you can reflect that you have discovered many parts of Sienna that few visitors knew existed with famous and exquisite works of Renaissance and Pre Renaissance art just there to be admired, and passages, palazzos, courtyards and churches full of calm and beauty.

The entire village of Sillico is transformed with medieval costumes into a bandits lair  the most famous of which was “Il Moro”. The medieval town inhabitants serve a delicious medieval meal in various nooks and crannies of the village, the church also hosts an exhibition with tools of the various local crafts. This Feast is held as a commemoration of the time that Ariosto an Italian nobleman and literary star who was mayor of the town of Castelnuovo de Garfagnana was taken prisoner by the feared bandit Il Moro.

The area of Garfagnana where you can find La Collina del Sole was the through road for Gina and La Collina del Sole ViewSalt from the sea for many of the dukedoms and principalities of Northern Tuscany, and as salt was a precious commodity to preserve food and to help keep things cold, by default Garfagnana became a magnet for all manner of bandits and “salt pirates” who would lie in wait for convoys and extract any valuable item from their hapless victims.

Other fun pastimes in Garfagnana over the weekend is antiques shopping which Fornovolascocan be enjoyed in the historic town of Castelnuovo di Garfagnana on the  1st Saturday and Sunday of each month, in the medieval jewel of Barga every 2nd Sunday of each month and in Lucca every 3rd  Saturday and Sunday of the month. FANCY A MEDIEVAL TUSCAN TREAT?

One of the highlights of choosing a Lucca Villa Rental when you browse through the many LaCollinaDelSoleSmallFileVilla rentals in Tuscany is that the area is very proud of its medieval ancestry, in fact the region of Holiday villas in Tuscany had its Golden moment in the middle ages and as such re-lives their ancestry at every conceivable opportunity, a short distance from La Collina del Sole you find the newly and brilliantly restored Fortress of le Verrucole this fortress has just opened an attraction / experience guaranteed to appeal to young and old alike when they rent a villa in Tuscany  As while enjoying villas for rent in Tuscany is about the sun, food , recreation and relaxation it is also about culture.La Fortezza delle Verrucole  has not only been lovingly and painsVerrucoletakingly restored and commands the most spectacular views that have been enjoyed for centuries and been fought over by Florence and the Medici family,  the marquises of Malaspina of Massa and the Dukes of Este from Modena. The Fortress of the Verrucole was often a centre for battles. The last battle was in the 1520 when, under the Estense control, in the second half of the 16th century it was besieged by the Florentine army. A couple of weeks ago a group of young Italian theatrical entrepreneurs has taken the fortress under their wing and created am DSCN1658“archeopark” For a modest fee you can see and feel what life was like in the middle ages, the group is dressed in typical costume, they also have recreated the feel of the times with food, medieval methods of cultivation, sewing and craft making they have started a Facebook page so you can follow them, all the feedback has been very positive. Now onto FOOD truly worthy of a medieval feast we recommend you go to the Osteria Vecchio Mulino one of the restaurants we love. It is on Via Vittorio Emmanuelle 12 Telefone DSCN16610583 62192 you do not need to dress in medieval garb, this place is perfect for a grown up foodie snack, If you do not want a full meal, but still fancy  tasting a variety of typical Garfagnana food then we suggest you try the “Degustazione” of local cheese and cold meats at this historic Osteria, the cheeses are all topped with local sauces that enhance their natural flavour, the cheses here are mainly goat milk based, the cured meats all come from nearby farms and curing houses, from sweet Parma like cured ham to Biroldo the local Black pudding to coarse and fine salami and a delicious aniseed tasting salami you can also try the local wine or feast and try one of the many excellent wines that line the walls.
